Application of analytical methods to evaluate the effect of the diet on human and animal metabolism

The bioactive properties of specific components contained in foodstuff can be evaluated by means of  both in vitro and in vivo systems such as cultured cells, animals and humans. All these researches represent different steps in the understanding the effectiveness and mechanism of action of specific nutrients and food bioactive compounds, relevant to the formulation and production of foods possibly bearing nutritional and health claim.
